Ingredients

10 sticks of Fresh Rhubarb

4 tbsp water

8 tbsp caster sugar

1 tsp powdered ginger

110g/4oz butter, softened

110g/4oz demerara sugar

180-200g/6-7oz flour

This strawberry cheesecake is an absolute doddle to make and will freeze well for up to 3 months. For the best results, cut the cheesecake into wedges while it is still slightly frozen in the middle.

175g (6oz) sugar

150g (5oz) soft butter or margarine

Grated zest of 1 lemon

175g (6oz) super-sifted self-raising flour

125ml (4floz) milk

Pinch of sea salt
